Devil’s Food Cake

Devil’s food cake is a chocolate lovers dream. I thought I was content with my Chocolate Cake until I baked these and realized, what I have been missing. This Devil’s cake is a dense cake, that is dark in color and it is way more richer than a regular chocolate cake. I still love my simple Chocolate Cake, but with this one – instead of using Oil and Coffee we will be using our good old Butter. It will be Vegan Butter in my recipe. But regular Butter will work well too. This cake have a hint of a Chocolate Brownie taste to it, but in a softer cake texture.

As always a good quality Cocoa powder is a key ingredient to this recipe. I prefer using an Organic Dutch processed Cocoa powder.

My most favorite part in making this cake is the, simple Chocolate frosting. It is the most easiest, fool proof chocolate frosting that you will be making today. Not only this frosting is easy to make, it does not require any special method, or tool.

Once you whip up the ingredients, you will be letting the chocolate do its own magic. The most important part – we need to be patient! I repeat, we need to wait until this chocolate sets in. But do not worry. In the name of checking; if the chocolate frosting has thickened enough, you are free to put a clean spoon in to do some texture test here and there, that includes licking the spoon as well.

Setting time may vary depending on the humidity of the day. So to be safe, I always make it the night-before and leave it on the kitchen counter. You can even pop it in the fridge but in an airtight container.

The Chocolate cake that I used to eat while growing up, always had Butter as one of the key ingredients. So, I wanted to bring that taste back to my Chocolate Cake and this Devils Food Cake is taking me back in time. Not to mention, I can just eat a slice of cake even before any frosting is added to it. Like I mentioned earlier, this cake’s taste will give you a slight recall of a chocolate brownie.

We all have seen many different, lovely techniques to frost a cake. But guess what, today I am going to show you; how easy it is to just slather some chocolate frosting on a cake and you will be surprised and proud of your piece of art.

All you need is a spatula or a flat thin kitchen utensil and you are ready to create your own wonder. Spread the frosting in between, on top and the sides of the cake. Bring in your imagination and you will end up with a masterpiece.

Devil’s Food Cake

Serves 6 – 8 | Cake Prep-time 15 mins | Cook-time 30-40 mins

Ingredients :

  • 1 1/2 cups of Unbleached All Purpose Flour.
  • 1/2 cup Cocoa Powder.
  • 2 Eggs.
  • 3/4 cup Margarine / Vegan Butter.
  • 1/2 cup of Sugar made into – Superfine Sugar.
  • 1/2 teaspoon Baking Powder.
  • 1/2 teaspoon Baking Soda.
  • 2 teaspoon of Vanilla Extract.
  • 1/4 teaspoon Salt.
  • 1/2 cup of Dark Brown Sugar.
  • 1 cup of Hot Water.

Directions :

  • Preheat the oven to 350 F° or 170 C°.
  • Grease two 6×2 round baking pans with butter or non-stick baking spray, and line parchment sheet to the bottom.
  • In a bowl, mix Hot water and Dark brown sugar and keep aside.
  • Take your Sugar and grind it into a Fine sugar and set aside.
  • In a small bowl: mix all the dry ingredients – sifted Flour, Cocoa powder, Baking soda, Baking powder, Salt and keep aside.
  • Take a large bowl and beat the Margarine well until it’s soft, fluffy and turned into a pale color.
  • Combines the Superfine Sugar and beat it well.
  • Add the Eggs, one at a time to the mixture and beat well until the batter is creamy.
  • Mix in the Vanilla extract into the batter and combine well.
  • Now add the dry ingredients into the batter while scrapping down the sides to combine.
  • Finally add the Hot water+Dark brown sugar mixture and mix well.
  • Bake for 30-40 minutes, or until a test-skewer inserted in the middle, comes out clean.

Notes:

  • I have used Margarine in this recipe. But Butter / Vegan Butter can be substituted.
  • Dark brown sugar has a deeper molasses flavor and also gives a deeper color to the cake.
  • Superfine Sugar is, granulated sugar that has been ground into finer crystals than regular granulated sugar. Superfine Sugar, melts quickly into a batter and improves the texture of the cake. This can be easily made at home by grinding the regular sugar in a food processor / grinder. Once you are done with the food processor / grinder, don’t open the lid right away – let the sugar dust settle before opening the lid. Only grind for few seconds. Do not over grind it.

Vegan Chocolate Frosting

Serves 6 – 8 | Prep-time 5-10 mins | Cook-time 4-6 hrs

Ingredients :

  • 1/2 cup of Margarine / Vegan Butter.
  • 2 cups of Semi-sweet Chocolate Chips.
  • 1/2 cup of Water.

Directions :

  • Take a pan, add Water and Margarine / Vegan Butter and simmer until it is fully melted.
  • Place the Chocolate chips in a heat proof container and pour the warm liquid in and let it sit for 2-3 minutes.
  • Whisk the mixture well until all the chocolate chips are melted and you have a creamy Chocolate syrup.
  • Let the chocolate mixture come down to room temperature and cover it. Let it sit for 4-6 hrs or until the Chocolate syrup turns into a spreadable-frosting-texture.

Notes:

  • Make the Chocolate frosting before you make the cake. This frosting need to sit and settle for minimum 4-6 hours before it can reach a spreadable, thick and creamy texture.
  • You can make this, the day before you bake the cake. This way you can reduce the waiting time to frost and complete the cake.
